This is what I like to call Heaven in a Tortilla…
The magic comes from the soy chorizo (I use Trader Joe’s brand). It really knocks most mock meats out of the park. HOWEVER, don’t fret, because the secret to their magic is really just spices, spices and more spices so if you can only find a basic ground “beef” crumble, you can still duplicate the flavor for the most part by following the super easy instructions below.
Makes 6-8 tacos
12 oz. package of soy chorizo (or basic crumbles)
Package of taco shells (corn or flour, hard or soft, is up to you)
1/2 cup each of diced red onion, red pepper and yellow/orange pepper
1/2 tsp of red pepper flakes (or to taste)
2 Tbsp of oil
****For basic crumbles users****
add in: 1/2 tsp each of paprika, garlic, chili powder, cumin and onion powder
Sauté over medium heat until onions are lightly browned and peppers are crisp-tender, about 3-4 minutes
Serve hot in warmed tortillas with condiments.
Optional Condiments:
Shredded lettuce
Shredded carrot
Vegan shredded cheddar or pepperjack
diced tomatoes
Tahnee’s Guacamole! (see recipe below)
**Tahnee’s Guacamole
2 ripe avocados
1/4 cup of finely diced red onion
1/4 cup of diced tomato
1/2 scotch bonnet pepper, finely diced
1 tsp of cilantro
Lemon juice from 1/4 of a lemon
salt and pepper to taste
